I became obsessed with Kabocha when I was living in San Diego. Thank you, Hillcrest farmers market. 

Kabocha, also known as Japanese pumpkin, is butternut squash's sadly underappreciated sister. Essentially, Kabocha is similar to butternut squash, only sweeter and more buttery — sorry, butternut squash, but it's true.  It has a velvety and fluffy texture — almost like a pumpkin-sweet potato hybrid. Yum! Plus, you can eat the skin on this gorgeous gourd, which makes cooking a breeze.
